Last week we were invited out to Klaassen farms for a behind the scenes tour of the farm for a campaign I am working on this month. We zipped around the farm on golf carts, which the kids absolutely loved. Learned all about the different types of blueberries, did you know theres more than one? I sure didn’t! Had a one on one picking lesson, learning the proper way to pick a blueberry and of course taste tested our way through the fields.
We ended up leaving the farm with two generous boxes of blueberries, gifted to us from Klaassen farms, far more than I could consume in a few days. I divided up our berries, some to the freezer, some to neighbours and some left in the fridge for snacking, salads and of course baking!
First up on my baking list were lemon blueberry scones. A few years ago I had made these Raspberry Scones, I made some tweaking to my original recipe and gave it a go again. And boy did these not disappoint. They turned out nice and golden, fluffy inside and the perfect sweetness to them. They really do make the perfect treat to accompany a nice hot cup of coffee!
