Once again I’ve found myself staring at a stack of over ripe bananas on the counter. It seems to be some weeks we clear out of the bananas I purchase and other weeks I’m left with a handful that no one wants. So after dropping Hazel off at school this morning I set out to do some baking, while I sipped my cold coffee. Chocolate Chip Banana Muffins, to be exact.
I will usually leave them (the bananas) out on the counter and either whip up a quick loaf of banana bread or have them stare me in the face until they are no longer usable and to the compost the go. When I make banana bread I usually make this recipe, Chocolate Chip Banana Bread, a classic I found years ago and to this day is still amazing. It takes about 10 minutes to make and 50 minutes in the oven and it’s pretty much fail proof.

However this morning I wasn’t quite feeling banana bread. I wanted the same great taste but I wanted something that was already pre portioned and didn’t require cutting. Something I could make and could quickly toss in the kids lunches or even grab and have in the car with a coffee while making school runs or waiting out a sleeping kid.
So this morning I took my usual banana bread recipe and make a few adjustments to make chocolate chip banana muffins. The recipe I made would normally yield 2.5 dozen muffins, however I opted to make 2 dozen muffins 2 dozen mini muffins. I love the option of the mini muffins as they will fit perfectly in the kids Yumboxes, making great school snacks.
