Jam Jam Cookies; With A Valentines Twist

Growing up we almost always had some sort of baked good in the house. Cookies, muffins, squares you name it there was always something. Never made in abundance but always something to either have as a snack or as a treat to take to school. One of my all time favourites where these Jam Jam Cookies that my mom used to make.

My mom, sister and I could devour anything chocolate in a heartbeat, however my dad wasn’t a fan so we always had non chocolate treats in the rotation. The Jam Jam Cookies were the perfect balance to a world often filled with chocolate. Soft and buttery like a short bread with just enough sweetness in the centre.

Truth be told I often forget about them when baking, as the requests usually come in for Chocolate Chip Cookies, Peanut Butter Cookies or Banana Bread. However when I was thinking of something that would be fun to make for Valentines Day aside from the usuals these popped into my head. I thought it would be even more fun to put a little twist on a classic favourite from childhood. 

These cookies are typically made using a circle cookie cutter, or a glass for those that might not have a circle cookie cutter. They are super simple to make, just letting the dough chill for an hour for easier rolling. As a child when making them we would make the sandwich cookie and bake them as a whole. I like the idea of baking them separately as it shortens the baking time and no worries of burning the jam in the centre.

      4-5 days if kept in a sealed container 🙂
