Lemon Raspberry Scones
We have been swimming in berries over here since we went berry picking a few weeks ago. I’ve frozen lots, made smoothies with some, mojitos with others and jam is up next. But these Lemon Raspberry Scones made for the perfect breakfast last week with my morning coffee. I can’t wait to get more raspberries and make them again!

Lemon Raspberry Scones

A light and delicious treat to be enjoyed with your morning coffee or afternoon tea

Scones
- Zest of 1 Lemon
- 3 TBSP Sugar
- 2 cups Flour
- 1 TBSP Baking Powder
- Pinch Salt
- 6 TBSP unsalted butter, cold
- 1 cup Milk
- 1 cup Raspberries
Glaze
- 2 TBSP Fresh Lemon Juice
- 1 cup Icing Sugar
Scones
- Preheat oven to 400*
- Mix together lemon zest, salt, baking powder, flour and sugar.
- Cut cold butter into dry ingredients until well distributed.
- Pour in milk and raspberries and gently fold into the dry ingredients with a spatula.
- Once gently mixed, turn dough onto a well floured surface and knead together.
- Gently pat and flatten into a circle.
- Cut circle into 8 triangles.
- Lift cut scones onto a baking sheet lined with parchment paper.
- Place in preheated oven and bake 20 minutes or until scones have set and are starting to golden.
- Remove from oven and let cool.
Glaze
- Mix together lemon juice and icing sugar.
- Drizzle over cooled scones

These look delicious! I love all the fresh ingredients. It looks so seasonal and delightful for summer. My kids would love these. I’m trying to come up with some ideas of what to feed them this summer, and this would be a nice treat for them!

Mmm! These sound wonderful! I could see very easy to adapt too for say blueberries instead!
