The Night my Husband Cooked Dinner and my Toddler Ate it

Alright friends he did it again! I know I probably shouldn’t be bragging about this, as I feel like I might be getting a few husbands in trouble but seriously this rocks! Evan brought home another newspaper recipe, a huge thanks to Ceri Marsh and Laura Keogh contributors of Metro Canada  for continuing to fuel my husbands passion for cooking! This week the must try recipe was Grilled Salmon and Zucchini Skewers and guess what, Hazel ate every single bite! If this isn’t a win, I don’t know what is! So with out further ado my friends, the recipe:

Grilled Salmon and Zucchini Skewers

Ingredients
  1. 1 TSP grated ginger
  2. 1/4 Cup soy sauce
  3. 2 TBSP Rice Wine Vinegar
  4. 1 TBSP Sesame Oil
  5. 3 Filet of Salmon
  6. 2-3 small zucchinis
Instructions
  1. Soak wooden skewers in water for at least 20 minutes
  2. Whisk together the ginger, soy sauce, vinegar and sesame oil.
  3. Place salmon filets in the marinade for 20 minutes.
  4. Remove the salmon from the marinade and cut into chunks, 1-2 inches in size (we cut ours before marinating)
  5. Slice the zucchini into rings and lightly toss in marinade.
  6. Thread the fish and veggies onto skewers, alternating as desired.
  7. Preheat your grill to medium high and wipe the grill with oil.
  8. Please skewers over the heat and give each side about three minutes before turning.
  9. Serve the skewers over rice, quinoa or bed of greens.
  10. Enjoy!
