PC® Streusel Topped Sweet Potato Bake

Yesterday we had our annual Friends Giving dinner. What is Friends Giving you ask? It’s exactly what it sounds like, a Thanksgiving dinner with some of our closest friends. While it’s always best to spend the holidays with your family you sometimes find that family isn’t just limited to those that are blood related. Our friends play a huge role in our life, and I honestly couldn’t ask for a better group of people. Some of them have even stepped into roles as Uncles and Aunts to our kids, and to Hazel, these people are truly some of her favourite. Since we haven’t had a family dinner on the holiday Monday the last couple of years we have taken this opportunity to celebrate friendship and spend an evening enjoying some drinks,  yummy food and lots of laughter with great friends. As mentioned in our last post here is a recipe from PC that we made for dinner. It’s so yummy you will think your eating candy instead of sweet potatoes!


PC® Streusel Topped Sweet Potato Bake

Per serving: 210 calories, fat 10 g, sodium 75 mg, carbohydrate 29 g, fibre 3 g, protein 2 g


¼ cup (50 mL) cold PC® Organics Salted Fresh Churned Butter, cubed
⅓ cup (75 mL) PC® 100% Pure Orange Juice with Pulp
¼ cup (50 mL) PC® 100% Pure Maple Syrup
2 tbsp (25 mL) PC® Organics Salted Fresh Churned Butter
½ cup (125 mL) no name® Pecans – coarsely chopped
⅓ cup (75 mL) no name® All Purpose Flour
3 tbsp (45 mL) packed brown sugar
4 sweet potatoes (about 3lb/1.5 kg), peeled and cut in 1-inch (2.5 cm) chunks


Preheat oven to 400° F (200° C). Spray 8-inch (2 L) square glass baking dish with PC® The Virtuous Canola Oil Cooking.
In bowl and using fingertips, rub pecans, flour, brown sugar and ¼ cup (50 mL) butter together until mixture resembles coarse meal. This will be your streusel topping. Set aside.
In large saucepan, combine sweet potatoes and cold water to cover. Bring to a boil. Reduce heat to simmer, cover and cook for 15 to 20 minutes or until sweet potatoes are tender. Drain. Return to saucepan. Add orange juice, maple syrup and 3 tbsp (25 mL) butter. Using potato masher, mash until well mixed. Transfer to prepared baking dish. Sprinkle with streusel topping.
Bake uncovered in centre of oven for 20 to 25 minutes or until topping is golden. Let it stand for 10 minutes before serving.

    I never thought of making sweet potatoes into a streusel dessert like this.
